The potato is one of the most widely eaten foods to date, all over the world. Whether as french fries, mashed potatoes, fingerling potatoes, sweet potatoes, and many more variants on the starchy vegetable, (yes, technically it’s a vegetable) everyone loves to eat potatoes. I may be biased, as I practically live off potatoes, but there’s a reason that the potatoes spread from the hills of Peru to become a key part of the population’s diet of many parts of Europe and the Americas.

By TED-Ed, today’s featured video tells the story of the potato, from it’s humble beginnings to the modern glory of french fries and potato chips. As it turns out, the potato has been much more influential in history than you might think. This video even argues that, without the potato, the industrial revolution in Europe may not have been possible, leading to our modern world perhaps never even coming into existence. Altogether, the video is very interesting, highlighting the potato’s fascinating role in history and how we might not be where we are now without the dull brown starch.
